  • 1/3 cup 80g maple syrup, or other liquid sweetener
  • 1/4 cup 50g applesauce
  • 2 cups 240g all purpose flour
  • 1 1/2 tsp 6g baking powder
  • 1/2 tsp 2g baking soda
  • 1 tsp 3g ground cinnamon, plus spices of your choice to taste
  • pinch of salt
  • 1 medium apple ~180g, diced

Instructions
 

  • Preheat your oven to 350°F (180°C) and grease a 18cm cake pan to get it ready for action.
  • In a mixing bowl, whisk together all the wet ingredients: oil, milk, maple syrup, and applesauce—it should look smooth and creamy.
  • Next, sift in the dry stuff: flour, baking powder, baking soda, spices if you’re using them, and a pinch of salt.
  • Add your apple pieces and gently fold everything together with a spatula until just combined—don’t overmix!
  • Pour the batter into your prepared cake pan and bake for about 45 minutes, or until a toothpick poked into the center comes out clean.
