Ingredients
  

  • 1 3/4 cups 248g of all-purpose flour**
  • 2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 2 tsp of ground cinnamon
  • 1 1/2 tsp of ground ginger
  • 1/4 tsp of ground nutmeg
  • 1/4 tsp of ground cloves
  • 4 large eggs
  • 1 cup milk whole or 3%
  • 1/2 cup of sour cream
  • 6 Tbsp 85g unsalted butter, and melted
  • 1/2 cup 110g of packed dark brown sugar
  • 3 Tbsp 66g of unsulphured molasses

Cream Cheese Glaze

  • 4 oz. cream cheese and softened
  • 1/4 cup 56g of unsalted butter, and softened
  • 1 1/2 cups 190g of powdered sugar
  • 3 – 4 Tbsp milk
  • 1/2 tsp of vanilla extract

Instructions
 

  • Preheat the waffle iron once the batter is ready.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves for about 25 seconds.
  • Make a well in the center of the flour mixture and set aside.
  • In a separate medium bowl, whisk the eggs, then add milk, sour cream, brown sugar, melted butter, and molasses. Whisk until smooth.
  • Pour the wet ingredients into the well of the flour mixture and whisk until just combined (a few lumps are okay).
  • Spray the waffle iron with non-stick spray. Pour the batter into the waffle iron, using about 2/3 cup for smaller waffles or 1/3 cup for Belgian waffles (adjust based on your waffle maker size).
  • Cook according to your waffle iron instructions and serve with cream cheese glaze. You can either pipe the glaze using a resealable bag with one corner snipped off or spread it with a spoon.

  • In a medium bowl, beat the cream cheese and butter with an electric mixer until smooth and fluffy.
  • Add powdered sugar, vanilla, and milk, and whip until light and fluffy.

Notes

  • To measure flour do not sift or whisk first, simply scoop with a measuring cup and level top with a butter knife.
