Ingredients
1 3/4cups248g of all-purpose flour**
2tspof baking powder
1/2tspof baking soda
1/2tspof salt
2tspof ground cinnamon
1 1/2tspof ground ginger
1/4tspof ground nutmeg
1/4tspof ground cloves
4large eggs
1cupmilkwhole or 3%
1/2cupof sour cream
6Tbsp85g unsalted butter, and melted
1/2cup110g of packed dark brown sugar
3Tbsp66g of unsulphured molasses
Cream Cheese Glaze
4oz.cream cheeseand softened
1/4cup56g of unsalted butter, and softened
1 1/2cups190g of powdered sugar
3– 4 Tbsp milk
1/2tspof vanilla extract
Instructions
Preheat the waffle iron once the batter is ready.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves for about 25 seconds.
Make a well in the center of the flour mixture and set aside.
In a separate medium bowl, whisk the eggs, then add milk, sour cream, brown sugar, melted butter, and molasses. Whisk until smooth.
Pour the wet ingredients into the well of the flour mixture and whisk until just combined (a few lumps are okay).
Spray the waffle iron with non-stick spray. Pour the batter into the waffle iron, using about 2/3 cup for smaller waffles or 1/3 cup for Belgian waffles (adjust based on your waffle maker size).
Cook according to your waffle iron instructions and serve with cream cheese glaze. You can either pipe the glaze using a resealable bag with one corner snipped off or spread it with a spoon.
Cream Cheese Glaze
In a medium bowl, beat the cream cheese and butter with an electric mixer until smooth and fluffy.
Add powdered sugar, vanilla, and milk, and whip until light and fluffy.
Notes
To measure flour do not sift or whisk first, simply scoop with a measuring cup and level top with a butter knife.
