Lemon Blueberry Bread
Greek yogurt, fresh or frozen blueberries, and easy icing are made with the easiest lemon blueberry bread. It is nice to enjoy this simple recipe all year round.

Ingredients
For the bread
1-1/2 cups + 1 Tablespoon of all-purpose flour, divided
2 teaspoons of baking powder
1/2 teaspoon of salt
1 cup of Greek yogurt
1 cup of granulated sugar
3 large eggs
1 teaspoon of lemon zest (from 1 lemon)
1/2 teaspoon of vanilla extract
1/2 cup of oil (vegetable or canola oil)
1 heaping cup of blueberries, fresh or frozen
For the lemon glaze (Optional)
1 cup of powdered sugar
3-4 Tablespoons of fresh lemon juice
Instructions
1. The oven should be preheated to 350 degrees F. Grease the bottom and sides of a 9×5-inch loaf pan excellently.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Beat the yogurt, sugar, eggs, lemon zest, vanilla, and oil in a big bowl.
3. Fold the dry ingredients into the wet slowly, just until they have been incorporated. Blend the blueberries with 1 Tbsp of flour in a separate bowl and then fold them gently into the mixed batter (After I pour it into the pan, I loved to save a bit to stick on top of the loaf.).
4. In the pan, pour the batter and bake for around 55 min – 1 hour till a toothpick inserted in the middle comes out clean.
5. Remove from the oven and enable 10 mins to cool in the pan. To cool completely, move to a wire rack.
The glazes (Optional)
The powdered sugar and lemon juice are whisked together and drizzled over the top of the loaf. Enable setting to harden before serving.
Notes
For altitudes, try to add extra flour!
For cupcakes: Bake for around 25 mins at 350 degrees F.
