How can you resist something as delicious as this lemon cake? That you can’t do. It would not be right. Fortunately for me, my mom’s a big fan of lemons, so I’m sharing these desserts with her. Cheesecake is also a favorite of mine and lately, I’ve decided to combine all these tasty things into one great cheesecake with berries in season and so tasty. In the cheesecake, there’s just enough tart and sweet lemon flavor, fresh blueberry pops, and then, if you like, it’s all topped up with some homemade blueberry sauce. The Pure Sky.

Lemon Blueberry Cheesecake

This simple-to-make lemon blueberry cheesecake, sweet and flavored, is the Ideal addition to any dessert table!

Ingredients:

200g of Scotch Finger biscuits
80g of butter, melted
375g of cream cheese softened
3/4 cup of caster sugar
300ml of cream
1 teaspoon of lemon zest
2 tablespoons of lemon juice
1 teaspoon of vanilla extract
3 eggs
1 1/2 cups of Coles Brand Australian Fresh Frozen Blueberries
Icing sugar, to dust
Fresh blueberries, to decorate
