INGREDIENTS
- 2 cups all-purpose flour
- 3 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 ¼ cup milk
- 1 tablespoon lemon zest, from 1 lemon
- 2 eggs, lightly beaten
- 1 tsp pure vanilla extract
- 3 tbsp unsalted butter, melted and cooled slightly
- ½ cup freshly squeezed lemon juice, from 2 lemons
INSTRUCTIONS
- Preheat the griddle to medium heat.
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together milk, lemon zest, eggs, vanilla, and melted butter. Add this mixture to the dry ingredients and mix lightly. Gently fold in the lemon juice; the mixture will bubble up and become somewhat fluffy. Be careful not to overmix.
- Drop batter onto the hot griddle in 1/4 cup portions.
- Cook for 3-4 minutes or until bubbles appear on the top and remain without popping. Flip the pancakes and cook for an additional 3-4 minutes or until they turn golden brown.
NOTES
