No-Bake Chocolate Coconut Balls
A one-bowl recipe for no-bake chocolate coconut balls that are soft, chewy, and indulgent. Vegan, gluten-free, and yummy.

INGREDIENTS
½ cup of natural, unsalted peanut butter or almond butter
½ cup of pure maple syrup
¼ cup of unsweetened cocoa powder
¼ cup of warm water
1 ½ of cups unsweetened coconut shreds or flakes
1 cup of gluten-free rolled oats
½ cup of almond meal
¼ cup of ground flaxseed
OPTIONAL
1/4 cup of unsweetened coconut flakes for rolling
INSTRUCTIONS
1. Whisk together the almond butter, maple syrup, cocoa powder, and water in a big bowl Whisk until they’re smooth.
2. Using coconut, oats, almond meal, and flax to throw in. Stir until you have a mixture that is cohesive, dough-like. Towards the end, I fold the dough using a rubber spatula.
3. Scoop your hands into a mixture and roll them into bites. Roll in the coconut flake optionally,

NOTES
1. Up to 2 weeks of storage in an airtight container. If you really like them, you could even store them in the fridge.
