Ingredients
- 1 1/4 lbs. Chicken breasts boneless, skinless, and diced into 1-inch cubes
- 1 Tablespoon of olive oil
- 1/4 cup soy sauce with low-sodium
- 1/4 of a cup of water
- 2 tsp of honey
- Light brown sugar packed with 1 1/2 Tbsp
- 1 Tbsp of vinegar rice
- 1/4 teaspoon of sesame oil optional
- 2 Tsp fresh ginger peeled and minced
- 2 Tsp of fresh garlic peeled and then minced 2 cloves
- 2 tsp of cornstarch
Instructions
- Heat olive oil over medium-high heat in a 12-inch non-stick skillet and then add chicken and brown on the bottom for about 4 minutes, then flip and continue to cook until the center is about 160 degrees, approximately 4 minutes longer.
- While the chicken is cooking, whisk together the soy sauce, water, brown sugar, rice vinegar, honey, sesame oil, ginger, garlic, and cornstarch in a small mixing bowl (or liquid measuring cup).
- With the cooked chicken, stir in the sauce and then continue to cook and toss until the sauce thickens, about 45 seconds longer.
- Serve warm with a garnish of green onions and then, if desired, sesame seeds.
