Ingredients
Balsamic Rosemary Glaze
1/2cupof balsamic vinegar
1/4cupof low-sodium chicken broth
2Tbspof honey
1Tbspof dijon mustard
1rosemary spriglike 7-inches
1cloveof garlic minced
Salmon
46 oz of salmon fillets skinless or skin over
Salt and freshly ground black pepper
2tspof olive oil divided
Finely minced rosemary or like parsleyfor garnish (optional)
Instructions
Let the salmon sit at room temperature for 15 minutes.
In a medium saucepan, mix together balsamic vinegar, honey, Dijon mustard, rosemary, and garlic.
Heat the mixture over medium-high heat until it boils. Then, lower the heat and simmer for about 15 minutes, stirring occasionally, until the sauce thickens and reduces to about 1/3 cup.
Remove the sauce from heat, strain it through a fine mesh strainer, and set aside.
In a 12-inch non-stick skillet, heat oil over medium-high heat. Season both sides of the salmon with salt and pepper.
Place the salmon fillets in the skillet and cook for about 4 minutes without moving them, until the bottom is nicely browned.
Carefully flip the salmon and cook for another 4 minutes, until fully cooked.
Drizzle the warm balsamic rosemary glaze over each fillet before serving. If you like, garnish with finely minced rosemary or parsley.
