Ingredients

  • 2 sticks of celery chopped finely
  • 1/2 medium onion chopped
  • 2 medium carrots peeled & chopped finely
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1/4 cup flour
  • 1.5 pounds of uncooked chicken breasts
  • 1/4 tsp Italian seasoning
  • 2 generous cups of uncooked egg noodles
  • 1 cup heavy/whipping cream
  • Salt & pepper to taste
  • 1 tbsp fresh parsley chopped

Instructions

  • In a large soup pot, sauté celery, carrots, and onion in butter and oil over medium-high heat for 5 minutes.
  • Stir in the garlic and cook for about 30 seconds.
  • Add flour to the pot and cook for about a minute.
  • Pour in the chicken broth and stir until the flour has dissolved. Add chicken, Italian seasoning, and cream. Increase the heat to high, bringing the soup to a slight boil. Cover the pot with the lid slightly open.
  • Reduce the heat to a gentle simmer and let it cook for 10 minutes.
  • Stir in the noodles, cover the pot again (lid slightly open), and cook for an additional 10 minutes. Stir halfway through to prevent the noodles from sticking.
  • Remove the chicken from the pot, cut it up, and add it back in. Season the soup with salt and pepper to taste, and stir in the fresh parsley.
  • Serve the creamy chicken noodle soup immediately.

  • This recipe serves 4-6 people, depending on portion size.
  • For optimal enjoyment, it's recommended to eat the soup right away. The noodles tend to absorb the soup, so when reheating, you might need to add a splash of more chicken broth or cream.
  • If using chicken breasts, 1.5 pounds generally equals 2 larger ones or 3 smaller ones. You can also use boneless and skinless chicken thighs if you prefer.
  • Ensure the chicken reaches an internal temperature of 165°F, as it is considered safe to eat at this point. You can use an instant-read thermometer to check for doneness.
