Whether it’s a family dinner, a chilly day, or a remedy for a cold, homemade chicken noodle soup is always a great choice. It’s easy to prepare, can be made in large batches, and is perfect for meal prep or freezing for later.
Over medium-high heat, heat the olive oil in a pot.
The onion is diced and added to the pot. Keep adding veggies to the pot, except for broccoli, while you chop them. Cook for about 5 mins, until the onion has softened.
Stir in the seasoning, the chicken, and the broth. Bring to a boil, decrease the heat to medium-high by adding noodles, and cook until noodles are tender. During the last 2 minutes of cooking, add broccoli.
Stir in the parsley and, before serving, remove the bay leaf.
