Ingredients

Balsamic Rosemary Glaze

  • 1/2 cup of balsamic vinegar
  • 1/4 cup of low-sodium chicken broth
  • 2 Tbsp of honey
  • 1 Tbsp of dijon mustard
  • 1 rosemary sprig like 7-inches
  • 1 clove of garlic minced

Salmon

  • 4 6 oz of salmon fillets skinless or skin over
  • Salt and freshly ground black pepper
  • 2 tsp of olive oil divided
  • Finely minced rosemary or like parsley for garnish (optional)

Instructions

  • Let the salmon sit at room temperature for 15 minutes.
  • In a medium saucepan, mix together balsamic vinegar, honey, Dijon mustard, rosemary, and garlic.
  • Heat the mixture over medium-high heat until it boils. Then, lower the heat and simmer for about 15 minutes, stirring occasionally, until the sauce thickens and reduces to about 1/3 cup.
  • Remove the sauce from heat, strain it through a fine mesh strainer, and set aside.
  • In a 12-inch non-stick skillet, heat oil over medium-high heat. Season both sides of the salmon with salt and pepper.
  • Place the salmon fillets in the skillet and cook for about 4 minutes without moving them, until the bottom is nicely browned.
  • Carefully flip the salmon and cook for another 4 minutes, until fully cooked.
  • Drizzle the warm balsamic rosemary glaze over each fillet before serving. If you like, garnish with finely minced rosemary or parsley.
