Ingredient Notes

For the Soup:

Low sodium chicken broth: Creates a flavorful, savory base while allowing control over saltiness.

Water: Lightens the broth and balances richness without overpowering the other flavors.

Garlic (chopped and divided): Adds aromatic depth and savory warmth throughout the soup and meatballs.

Fresh parsley (divided): Brings freshness, color, and mild herbal notes to both the soup and meatballs.

Onion (chopped, divided): Adds natural sweetness and body to the soup, and infuses flavor into the meatballs.

Tomato sauce: Gives the broth a rich, tangy tomato base that evokes classic Italian comfort.

Crushed red pepper flakes (optional): Adds subtle heat to elevate flavor without overwhelming it.

Kosher salt and black pepper: Essential seasonings that enhance all the other flavors.

Dry cut-up spaghetti: Adds hearty texture, turning the soup into a filling, comforting meal.

For the Meatballs:

Ground turkey: A lean, tender protein that soaks up flavor beautifully and keeps the meatballs light.

Egg: Binds the meatball ingredients together for stability during cooking.

Seasoned breadcrumbs: Provide texture and help retain moisture while infusing herbs and seasoning.

Grated parmesan cheese: Adds savory, salty richness and umami to the meatballs.

Fresh chopped basil: Delivers fresh, sweet herbal notes that pair perfectly with the tomato broth.

Tips for the Best Italian Meatball Soup

Brown the Meatballs First: It adds extra flavor and helps them stay together in the soup.

Use Crushed Tomatoes or Passata: For a rich and smooth base that clings to the pasta.

Add Pasta Last: Cook spaghetti directly in the broth just before serving to prevent sogginess.

Season Gradually: Taste and adjust salt, pepper, and herbs as the soup simmers.

Garnish Generously: Top with freshly grated Parmesan and chopped basil or parsley.

Serving Suggestions

With Crusty Garlic Bread: Perfect for soaking up that flavorful tomato broth.

With a Simple Green Salad: Adds a fresh, crisp contrast to the hearty soup.

Topped with Parmesan & Chili Flakes: For extra richness and a bit of heat.

With a Drizzle of Olive Oil: Enhances the broth and gives a silky finish.

Pack Leftovers for Lunch: Heats up beautifully the next day.

Ingredients

For the soup:

  • 6 oz dry cut up spaghetti
  • 5 cups low sodium chicken broth
  • 2 cups water
  • 2 cloves garlic chopped and divided
  • 4 tablespoon chopped fresh parsley divided
  • 1/2 onion chopped, divided
  • 3-4 tbsp tomato sauce
  • pinch crushed red pepper flakes optional
  • kosher salt and fresh pepper

For the meatballs:

  • 16 oz 93% lean ground turkey or 99% lean
  • 1 large egg
  • 1/4 cup seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped basil

Instructions

  • Heat a large pot on high and pour in the chicken broth, water, crushed garlic clove, chopped parsley, a quarter of the chopped onion, tomato sauce, crushed red pepper flakes, and some fresh black pepper. Bring it all to a boil, then let it simmer gently for about 5 minutes.
  • While that’s happening, mix together the ground turkey, Parmesan cheese, egg, the rest of the garlic and onion, the remaining parsley, breadcrumbs, salt, and pepper. Roll this mixture into tiny 1-inch meatballs—you should get about 36 of them!
  • Carefully drop the meatballs into the simmering broth and cook for about 3 minutes. Then add the pasta and cook according to the package instructions.
  • Once the pasta is ready, stir in fresh basil, taste and adjust the salt and pepper, and serve with a generous sprinkle of grated Parmesan cheese.
  • Enjoy your cozy, delicious meal! 🍲🧡
